Ruth Dolby
Ruth Dolby is a Fellow of the Institute of Food Science & Technology; a Super Taster, Thermal Taster & possesses a Flavour Memory, authenticated by University of Nottingham, where is an Associate of Nutrition. Ruth is a co- founder, and now Innovations Director, leading Food Science Fusion, a company offering practical development for innovation application and incorporating How Many Beans? training and guidance for entrepreneurs, growing food businesses and those new to the food industry.
Ruth believes that the Food & Drink Industry is at a stage where great responsibility and opportunity are merging as key drivers for best practice: health & safety, nutrition & diet, sustainability & affordability. If it is not eaten it is not nutritious, if it is wasted it is bad for the planet. One of their main current projects is Nudge Nutrition, a 2-year IUK Study into the incorporation of recovered side stream fibres into pastry to improve the nutritional delivery outcomes. This is the latest in a line of projects that improve nutrition by incorporating up-cycled side streams that otherwise would be lost to the food chain.
