In the latest in IFE's Buyer Insights series, we talk to Cavendish Ships Stores Category Manager Peter Alton about the growing demand for world cuisines, sustainable and IFE as a lifeline for connecting with new and existing suppliers. 

Peter AltonTell us a bit about your role

I am a Category Manager with Cavendish Ships Stores who are one of the UK’s largest suppliers of food and beverages to the UK cruise-line industry. We procure a wide portfolio of food and beverage products across ambient, chilled and frozen sectors. I have been with Cavendish for 12 years and have seen the business grow substantially in line with the ongoing demand for cruise travel.

What do you love about working in food & drink?

I like the fact that every day is different. Price fluctuations, product availability, lead times are all issues that challenge you on a daily basis. The marketplace is more competitive than ever so to be successful you need to fully aware of what is happening around you and what potentially could happen in the future.

What trend or product do you think will be making waves in 2025?

Trend wise as people travel more, we are seeing more interest in world cuisines such as Malaysian, Korean, Indonesian and South American. Ingredients such as kimchi, black lime, yuzu and miso are becoming more mainstream. Bold flavours and bold colours are back with texture playing an important part in consumers decisions. Sustainability and ingredient integrity are also becoming more important. Our customers want environmentally friendly products that support farmers, reduce air miles and wherever possible eliminate single use plastics. As the demand for world cuisines grows sourcing with integrity is key.

How do you discover new products and trends?

We are lucky with have a wide and diverse supplier base who keep us up to date on what is new and on trend. We work with chefs and artisan producers who are constantly driving things forward and exploring new opportunities. The rise of the internet and social media often highlights trends that we may not have been aware of.

What are you hoping to learn/source from IFE this year?

IFE is a lifeline for our business as it gives us the opportunity to engage with existing and new suppliers and to see industry innovations and trends all in one place.  I always look forward to seeing what the artisan producers are offering and to see first-hand products I may have only seen or heard online. It is also a great opportunity to talk with likeminded individuals about pricing, potential supply issues or opportunities for the future.
