This is how Rinaldo Marino, owner of Salumi Emmedue, begins, addressing the thorny question that, due to the increasingly frequent technological innovations, affects the entire world of industry: to encourage automation or to rely on traditions?

"I think we have to find the right balance. Unlike large companies, we stand out for a type of products that boast well-pronounced origins and craftsmanship. Much of the processing is still carried out by hand, according to ancient recipes and procedures, handed down from father to son. This is also reflected in the choice of raw materials and respect for the curing times of our cured meats."
